Food and some fresh ingredients are hard to come by in the shops during this Coronavirus Pandemic. It emotionally drained and disrupted my life. After visiting several shops and their shelves remain empty with essential products unavailable. I used the resources in my cupboard and fridge to create this delicious tasty chicken wing soup. I want to share this recipe free with others who are going through this situation and feeling blue. From my personal experiences I found out that chicken soup works wanders when I want just little pick me up to revive my energy. I am not saying that it cures the big C, (Coronavirus).
5 Chicken Wings. 4 1/2 Cup of Water. 3 Small Carrots. 1 Medium Parsnip. 1 big Irish Potato (spud). 1.1/2 cup of Plain Flour. 1/2 pk Grace Cock Soup. 1 stark of Spring Onion. 1 clove of Garlic. 5 Seeds of Premento Seeds (optional). Salt (optional). Small handful of fresh coriander. Flat tsp of dried coriander seeds. 1 stark of fresh Thyme or 1 tsp dried thyme. 1 pice of Sweet Corn. 1 Table spoon of Dunns River Jamaican Hot Pepper sauce, optional (1 green Scotch Bonnet pepper). 1 Table of my frozen Sage. 1 Dried Bay Leaf. 2 Star Anise Seed.
1 Pressure Cooker or any pot in your cupboard. 1 Mortar and Pestle. 1 Sharp Knife. 1 large Spoon. 3 Bowls. 1 Fork. 1 Cup. 1 tsp. 1 Tsp. 1 Can opener. 1 plate to rest the utensils on when cooking.
(1) Rinse out the pot and add the chicken wings into one of the bowl and washed until clean with no visible blood then add to preassure cooker pot. Cover the pot.
(2) Cut up the Carrot and Parsnip in chunks, squash the Spring Onions in the palm of your hand, chopped-up the garlic and sweet pepper fine, like the potograph above and add into the pot with the chicken wings.
(3) Add the frozen sage into the pot (The Community Garden at Sunnyside Road N19 in Islington gave me some fresh Sage from their garden, thy advise me to cut them up and freez it. This was in 2019. Thanks.
(4) Chop up the fresh Coriander also beat Anise Seed and dried Coriander Seed's in the mortar, add them into the pot with the Bay Leaf into the pot.
(5) Add 4 1/2 cup of water into the pot with the chicken ingridents and stirred and add 1/2 pk Grace Cock Soup into the pot whilst stirring. Put the pot on the electric fire on mark 6 to boil-up. Leave to cook for 30 minutes until the pressure cooker beginning to sing.
(6) Leave the ingredients in the pot to cook on the fire. Mixed 1 1/2 cup of plain flour into a bowl and add a pinch of salt (optional), add a little water then mixed into a dough and leave the dough covered in the bowl.
(7) Peel 1 large potato and cut into 4 pices and stored in a different bowl. After 30 minutes take the pot off the fire and let out the steamed very carefully. Open the pot and used the big spoon stirredo, making sure the cock soup did not stick to the bottom. Put back the pot on the fire again to cook again. Take the dough and make the dumplings and add them into the pot with the cut potatoes whilst it is boiling on the fure, then stirred.
(8) Add 5 Primento (optional) to the mortar and grind then add into the pot with a twig of fresh or 1/2 tsp dried thyme and mixed. Cover the pot a gain and leave it to cook again.
(9) 20 minutes after take the pot off the fire and let the steam out safely. Open the pot and stirring making sure the soup is not stuck to the bottom of the pot. Add 1 Table Spoon of Duns River Jamaican hot pepper sauce and mixed. Taste the soup and add salt (optional) or add to taste if needed. Stirred and closed the lid. Leave the pressure cooker cook for a further 20 minutes.
Remove from the fire and let out steam. Open the pot and stirred. Remove the thyme, spring onion and bay leaf before serving. This could feed 3 people easily. If you cooked it for yourself, cool down the balanced and leave it in your fridge. Make sure that store it on top of your fridge and make sure uncooked food can't leek into the soup to cost contamination. Enjoy.
